
Tomato and Basil Sorbet
Nothing captures the essence of summer quite like vine-ripened tomatoes and fresh basil. This savory sorbet is a refreshing and unexpected first course, ideal for warm-weather entertaining or as a unique palate cleanser. Ingredients:
- 5 fresh ripe tomatoes
- ½ cup fresh lemon juice
- 1 teaspoon salt
- ½ cup simple syrup
- 1 tablespoon tomato paste
- 6 fresh basil leaves, coarsely chopped
Instructions:
- Prepare Tomatoes:
Peel, core, and seed the tomatoes. Purée in a food processor until smooth. You should have about 3 cups of purée. - Mix:
Stir in the lemon juice, salt, simple syrup, tomato paste, and chopped basil until well blended. - Freeze:
Pour the mixture into the bowl of your Whynter ice cream maker and freeze according to the manufacturer’s instructions.
