Ingredients:
- 1 cup heavy cream
- ½ cup whole milk
- ½ cup honey (preferably mild-flavored)
- ¼ cup granulated sugar
- 1 teaspoon pure vanilla extract
- ½ teaspoon almond extract (optional, enhances nutty flavor)
- ¾ cup honey roasted almonds, chopped roughly
Instructions:
- Prepare the base:
In a medium saucepan, combine the heavy cream, milk, honey, and sugar. Heat over medium heat until the sugar and honey are fully dissolved and the mixture is warm but not boiling. - Add flavors:
Remove from heat. Stir in the vanilla extract and almond extract if using. Allow the mixture to cool slightly, then refrigerate for at least 2 hours, or until well chilled. - Prepare the almonds:
Roughly chop the honey-roasted almonds. You can toast them lightly in a dry pan for extra flavor, but it’s optional. - Churn the ice cream:
Pour the chilled base into your Whynter 0.8-quart ice cream maker and churn for 30-60 minutes or until it reaches soft-serve consistency. - Add almonds:
In the last 5 minutes of churning, add the chopped honey-roasted almonds so they are evenly distributed. - Enjoy:
